Solterito Recipe | Classic Peruvian Salad

All recipes come with a story, and that's what we love so much about food. Recipes are passed from generations, many times with purpose and memories that keep them alive.


This Solterito recipe is a fresh salad from Arequipa, a city in the southern coast of Peru. It means "Single guy". As legend has it, this recipe was created in a guest house for the single men and women who wanted to maintain an attractive figure to get married. We don't know about that, but we do know, it's delicious!


SOLTERITO

Serves 4


Ingredients:

Queso fresco - 1 cup (in small cubes)

Fava beans - 1/4 cup

Red onion, minced - 1/4 cup

Corn, fresh, frozen or from a can - 1/4 cup

Tomatoes, 1 or 2 cubed into small pieces

Minced parsley

Green Olives, 8 sliced

*Optional: 1 cooked potato, cubed


To Dress:

1 lime (juice)

1 tbsp white wine vinegar

4 tbsp olive oil

Salt and pepper to taste

Method:

If using potato, cube and boil until soft. If using fresh fava beans, boil for about 20 minutes and let cool. Mix everything in a bowl and serve cold. Great as a side dish or a small treat to serve guests. Easy peasy!
