One legend says the origins of Biryani stem from attempts to keep warriors nourished during battle, using rice, spices and meats, and then buried in an earthen pot in a hot pit. Another legend says the dish was brought to India by Arab traders. One thing we do know however is the word 'biryani' is derived from the Persian word Birian, which translates to ‘fried before cooking,' and Birinj, the Persian word for rice.
