It's impossible to understand Moroccan cuisine without appreciating the importance of Tagine. Tagine has been part of Moroccan cuisine for hundreds of years - with the first archived recipes cooked 'tagine-style' dating back to the 9th century.
Tagine is not only the iconic stew-like dish, but also the vessel it's cooked in. This beautiful clay or ceramic cookware has a flat bottom and an ornate dome top. It's extravagant presentation at its finest. But it's not just beautiful cookware... The unique shape of the tagine traps steam and returns the liquid back to the pot, resulting in minimal water use and tender, buttery meats and vegetables. The combination of high heat with moisture brings a slight caramelization to the food lucky enough to be inside. The end result is an incredibly flavorful meal filled with spices and an earthiness from the clay pot.
In this Moroccan Tagine class you'll master a traditionally prepared Tagine. You'll round out the meal with a gorgeous Taktouka salad, Moroccan spiced olives, and the iconic Moroccan mint tea.
