This fried rice dish includes all the usual suspects… but things become interesting very quickly when Chinese and Peruvian flavours begin to meet and the Peruvian Amazon’s food culture comes to life… ripe plantain, pork loin and bacon. Savory, sweet and smoky. This dish will change your definition of fried rice.
