Immerse yourself into the Amazonian flavours of Peru.  Get to know the Chinese influence on this culture and cuisine as you indulge your palate with the taste of umami. Umami is the fifth (and perhaps best?) flavour taste after sweet, sour, bitter, and salty. In a word… delicious.


The star of this meal is Amazonian Chaufa. This fried rice dish includes all the usual suspects… but things become interesting very quickly when Chinese and Peruvian flavours begin to meet and the Peruvian Amazon’s food culture comes to life… ripe plantain, pork loin and bacon. Savory, sweet and smoky. This dish will change your definition of fried rice.


Rounding out the meal you’ll learn to make a sweet and savory, cheesy Baked Plantain and a refreshing Heart of Palm Salad, full of texture and flavours. Get your kitchen ready, because we’re heading to the jungles of Peru!
